Job Description

Role & Responsibilities



Reports to Executive Chef/Head Chef and Sous Chef

Prepare all food items as per standard recipes and presentation

Maintain full knowledge of all menu items, daily features and promotions

Communicate product knowledge to all relevant personnel

To learn and record skills and recipes from other members of the team

Product knowledge of all food products used on station

Keep station well set up with mise-en-place

Pro-active stock monitoring, maintain minimum par levels for his/her section

Understand importance of waste control and implement SOPs that minimize kitchen wastage

Ensure cleanliness, maintenance of all work areas, utensils and equipment

To report any maintenance issues to the Head Chef immediately

To work with the Head Chef/Sous Chef to develop new menu/dishes/system

Compliant with Alter Ego policies and procedures to ensure statutory regulations are observed

Follow kitchen, as well as safety and sanitation, policies, procedures and service standards

Ensure all kitchen colleagues are aware of standards/expectations

Maintain grooming standards including but not limited to the uniform, dress code and cleanliness

To be flexible and willing to help the restaurant kitchen at busy times if required

Cover sickness, and follow policies on absenteeism for the whole team

Other duties as assigned



Qualifications and Education Requirements



At least 3 year(s) of working experience in a relavant role is required

Candidates must possess at least Higher Secondary/Pre-U/A Level, Advanced/Higher/Graduate Diploma in Food Preparation; Beverage Services Management or equivalent

Required language English

Must be able to work in Brunei Darussalam

Modern Asian and Western food experience would be an advantage

Good knowledge of restaurant operations would be an advantage

Good Interpersonal, organization, communication skills

Able to work under pressure and tight schedules

Able to work independently with minimal supervision

Preferably Non-Executive specialized in Food/Beverage/Restaurant Service or equivalent
